Rancho Mission Viejo Update (Open House Events)
With most of the overhead buildout in place, it’s time to go vertical. It’s time to get the framer and drywall subcontractors onsite. Currently, most of the ducting, sprinklers, waterlines, and HVAC units are in place and with the framing and plumbing set to start this week, we will really start to see the big picture. The pool builders will get started within the next three weeks.
We have some exciting news to announce! We are planning on hosting weekly open house events at the new Rancho Mission Viejo swim school on Saturdays from 9:00-12:00 pm. We will personally go over all of the buildout details, offer families a hardhat tour of the facility, and we will register prospective families onsite. These events are set to take place every Saturday in March. We will also have cool gift giveaways for all families that register. These events are open to our Founder’s Club members and all families with an interest in the swim school. We look forward to meeting you and to showing you the goods!
On a final note, we are still looking to open in June 2021. Our Founder’s Club registrations will end in April and our schedule will open in May. Message from our Founder
The vaccine stage of this pandemic has arrived and as I write this note, there are three vaccines that have been approved by the FDA for use in the US. According to npr.org Covid-19 vaccine tracker, approximately 15% of the US population has been vaccinated and that number looks to rise exponentially over the next 90 days. Phase 1A is behind us and Phase 1B is upon us which means that the majority of our Evolution Team can now be vaccinated. You’ll be happy to know that when surveyed, 85% of our team said that they would be vaccinated if given the opportunity and that’s great news.
The buildout of our new swim center is going well. So far, no delays and that’s great news as well. I have been so much more hands on this time around because like most human beings, I do not like surprises, especially of the construction type. My routine is to be onsite 3 times per week, working directly with the superintendent, identifying and resolving any potential issues before they become bigger issues. So far, so good. We are still on target to open in June 2011 and like I said last week, a one-year delay in a pandemic year is not bad and I’ll take it.
Spring is upon us which means the start of daylights savings. On March 14th, our clocks will spring forward one hour which offers us daylight later into the evenings. Spring also introduces our spring offerings, which include the Spring Swim Team, discounted registrations for summer sports camp, and the opening of some of our seasonal swim lesson sites. It’s a time to celebrate that warmer months are ahead of us and as we start to take a hold of this pandemic, our kids will be able to play, whether it be in the water or on the field.
On a final note, our Founder’s Club is doing exceptionally well and now that our facility has enough for us to do “show and tells”, we are offering weekly visits to our new site via our Open House events on Saturdays, from 9:00-12:00 pm. More information will be coming soon but mark your calendars because every Saturday in March, we will be hosting an open house, for our Founder’s Club members and future members.

Green Goddess Grilled Cheese Sandwich
This green goddess grilled cheese is a tasty lunch idea and twist on your fave sandwich! This recipe serves two people, but you can easily double the ingredients to serve more.
Ingredients:
- Whole grain bread
- Havarti and mozzarella cheese
- Spinach
- Alfalfa sprouts
- Avocado
- Tomatillo or green tomato
These healthy grilled cheese sandwiches are SO easy to make!
Directions
- Add thinly sliced avocado to your first slice of bread, then add one cheese slice. Add the rest of the veggies, then add another cheese slice.
- From there, melt butter in a skillet, then fry the assembled sandwiches for about 5 minutes each side. Make sure to closely monitor your sandwich and not crank the heat too high to make sure your sandwich doesn’t burn. A great tip for melting the cheese completely is to place a lid on top of the skillet while frying.
- Once your grilled cheese is finished, slice in half then serve with your fave sides. I usually serve with ketchup and pickles, and sometimes a side of soup!

STARFISH 4
The Starfish 4 lesson plan is where safety meets swimming. This lesson plan continues to reinforce the back float while incorporating a forward motion stroke, both under the water and over the water. Students will learn to coordinate the stroke, breathing, and the back float. Once students complete this lesson plan, they move on to Starfish 5, which is the first lesson plan that introduces students to the formal freestyle swim stroke. Meet Alexis!
Coach Alexis joined the ESA team about one year ago and quickly became an important part of the Evolution Family! One of the reasons many of our swimmers love Coach Alexis is her infectious positive attitude. Her smile always encourages her students to “just keep swimming”. It’s this attitude and gentle nature that gives her the ability to calm some of our most anxious little swimmers. She is passionate about water safety, and her goal is to be remembered not only as the instructor that helped a child learn to save their life in the water, but the instructor that taught them to do it confidently. When Alexis isn’t busy bringing joy to her swimmers, she is focused on school. She earned her Associates Degree in Allied Health Science and is currently in the process of getting into the DMS program at OCC. Her career goal is to be an ultrasound technician. When Alexis finds herself free on the weekends, she loves spending time with her family out in the desert. One of her favorite activities is to hop on a dirt bike and go off roading exploring the great outdoors. Alexis hopes to see you all in the pool soon and wishes you all a Splashtastic Day!
